Oil produced from olives originating from Olivar de Sierra, in the Sierra de las Villas de Jaén. It contains three types of local varieties: Matihuela, Cerezuela de Villacarrillo and Royal de Cazorla.
The Matihuela variety is grown exclusively by Molino de Casilda, which makes this EVOO unique in the world. Collected at the end of October through mechanical means with vibrators and milled maximum 4 hours from collection.
